I’m really tired a lot of the time, and this can conflict with my desire for tasty food. In times of desperation, I’ll nuke a bowl of ramen with frozen vegetables; this keeps me from going hungry, but it’s pretty un-satisfying. To avoid this, I try to always have leftovers in the fridge. That way, even if I’m dead tired, I can microwave up some homemade goodness.
I woke up today in a cooking mood, and much more energized than usual. I decided to take that energy and motivation and turn it into a week’s worth of food. I spent all day cooking, and here’s what I have to show for it:

Kaletatoes (inspired by Vegan Elbows) and Punk Rock Chickpea Gravy

VeganYumYum’s Smokey Miso Tofu. I love to keep this in the fridge to snack on.

My version of Get Sconed’s version of New Farm Mac & Cheese- my go-to mac & nooch recipe.

Lentils & rice with caramelized onions and spiced pita crisps, from Veganomicon.



that’s quite a haul. a lot of comfort food in there. your mac ‘n cheese looks awesome – makes me instantly hungry. spiced pita crisps look really good.
