Last week, on my weekly produce-shopping trip to Reading Terminal Market, I encountered $1 bunches of asparagus. One dollar! In case you’re not as avid a vegetable fan as myself, a bunch of asparagus is usually around $4- too much for something I can finish off in one sitting (even thought I love it).
The catch: the sign read “Perfect for tonight!” which I figured meant “Old and wilted by tomorrow!” I wasn’t going to be able to cook it that night since I had a dance class, but I bought two bunches and hoped for the best.
The result? Not the most fabulous asparagus I’ve ever had, but not half bad. It’s really easy to cook: just chop off the bottom inch or two (this part’s tough and gross), toss with olive oil, salt, and pepper, and bake at 400 degrees for about 20 minutes. Yum.



Oooh I LOVE Asparagus – but it is sooo expensive!
I’d have snaffled them up at that price too.
Try squeezing some fresh Lemon juice over them as well as Olive Oil, Salt and Pepper before baking – yummers!

You can also boil asparagus for 2 minutes and serve with a little olive oil, grated Parmesan cheese, and Italian seasoning.

Hey Craig! I’ve never boiled asparagus- I love the flavor that roasting brings out. But net time I want it quicker I’ll try!

$1 — that is so cheap.
Isa’s classic quiche is good w/ asparagus.
I never thought of roasting asparagus, though come to think of it I think I’ve had it that way before. really tasty.
